Fruit Pizza

Preheat oven to 350

Course Dessert

Ingredients

  • 4 or more cups fresh fruit preferably berries

For the Crust

  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 3/4 cups flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/4 tsp salt

For the Filling

  • 16 oz cream cheese
  • 1/4 cup sugar
  • 1 cup powdered sugar
  • 1 tbsp vanilla
  • 1 large container cool whip or 2c heavy cream + 1/4 sugar whipped to stiff peaks

Instructions

  1. For the Crust: Cream butter and sugar. Add eggs one at a time and mix well. Add vanilla and mix until combined.

    In a separate bowl, combine dry ingredients and mix well. Slowly add to wet ingredients and mix until combined. Press dough evenly into large cookie sheet and bake 15 minutes at 350 until golden.

  2. For the Filling: Whip cream cheese, sugars and vanilla until smooth. If using cool whip, add to bowl and mix well. If using heavy cream, set cream cheese mixture aside and whip cream and sugar to stiff peaks. Ad cream cheese to whipped cream and mix until combined.

  3. Once the crust has cooled, spread filling evenly over crust. Top with fruit and serve immediately or cover and refrigerate until ready to serve.
